It’s Day 2. No coffee today. Grrr!
While my coffee should’ve been brewing I was cutting up exotic fruit for our morning smoothie. I am positive that this one is Dragonfruit. Very cool looking!
This is the Dragonfruit inside. It was almost like a pudding texture and tasted appley/coconuty.
This one is Passionfruit. It was all seeds basically. I liked it better than the Dragonfruit.
Lunch was fresh tomato, cucumber, tzatziki sauce (not dairy-free, sorry) and falafel balls on a pita.
Lunch rocked! And so easy to make.
For supper we had gluten-free penne with cremini mushrooms and marinara sauce.
Supper was pretty damn good too!
All in all, another good day. One thing I have decided is that I am thankful for is my healthy stomach. Buying gluten-free products is pricey! I feel for those that don’t have the choice and have to pay a premium for specialty items.
