Oops! I missed my post for Day 5 so I’m putting it together with Day 6. We are still doing really well. My hubby is down 6 lbs! My weight is about the same-joys of being 5 3″ is that my weight doesn’t fluctuate that much unless I do something drastic. We’re not doing this for weight loss though, we’re both healthy weights (he’s 6 2″) but it’s neat to feel so frickin’ light and clean.
For supper last nite we chowed down on GF brown rice pasta tossed with oil, garlic, chili peppers, shrimp and roasted red peppers. We really chowed. It was so good!
We’ve been eating a variety of salads, more falafels, lots of fruit and nuts and trail mix around our main meal at nite.
For supper tonite we had Vegetarian chili, brown rice and tamari. Again, so easy to make (chili was Hormel’s-probably high in salt but meat-free and fast) and full of fibre.
It is also Tomato Thursday! Woohoo! There has not been any exciting changes with my table top tomato plant over the last week but I know they’re ripening, and, if I can get my toddlers to stop popping them off the plant, there may even be some red ones soon!

Tomato-Avocado Salsamole
Makes 1 cup
30 minutes or fewer
This recipe is a cross between guacamole and salsabut lower-cal than the former and more healthful than the latter, thanks to avocados anticancer/anticholesterol compounds. Like regular salsa, its great as a dip or a topping for burritos and tacos.
¼ cup finely chopped red onion
1 tsp. minced jalapeño, or more to taste
1 Tbs. fresh lime juice
1 Tbs. cider vinegar
1 tsp. minced fresh garlic
¼ tsp. salt
1 ripe peeled avocado, preferably Hass, seeded and coarsely mashed
1 medium-sized tomato, chopped
¼ cup chopped cilantro
Combine onion, jalapeño, lime juice, vinegar, garlic and salt in mixing bowl. Add avocado, tomato and cilantro; stir well. Serve immediately.
